3 Vegan Stuffed Sweet Potatoes | Easy Vegan Recipes

With the weather getting colder and with nothing to do but stay inside, there’s nothing like some great comfort food to make you feel good about being home bound! Sweet potatoes are one of my favorite comfort foods. I used to feel guilty eating them, but now I know I can just make them an entire meal on their own!
So here are three different vegan stuffed potato recipes I think you’ll enjoy. They are full of nutritious ingredients that all taste delicious. These sweet potatoes also make a great meal prep, so don’t feel the need to eat them all at once since they save well in the fridge and heat up great in the microwave or toaster oven.
First we start with preheating the oven to 400 degrees F. While the oven heats up, wash the sweet potatoes and poke holes in them with a fork. Place on a baking sheet and cook in the oven for one hour.
In the meantime, make your stuffings! All you really need to do is heat up the ingredients in a pan with a little olive oil, lemon juice, or lime juice.

Breakfast Tofu Scramble Sweet Potato
Ingredients:
¼ Cup Red Onion
¼ Cup Mushrooms
¼ Cup Bell Pepper
3 Cherry Tomatoes
½ Block Firm Tofu
Season how you like, I used:
Garlic Powder
Paprika
Red Chili Flakes
Chili Powder
Trader Joe’s No Chicken Seasoning
Southwestern Style Sweet Potato

Ingredients:
¼ Cup Red Onion
¼ Cup Bell Pepper
¼ Cup Corn
½ Cup Black Beans
1 Jalapeno
Season how you like, I used:
Garlic Powder
Paprika
Red Chili Flakes
Chili Powder
Top with cilantro, avocado, and salsa.
Chickpea Tahini Sweet Potato

Ingredients:
½ Cup Chickpeas
1 Cup Baby Spinach
Season with garlic powder and salt, top with tahini.
