3 Chia Seed Pudding Parfaits | Easy Vegan Recipes


If you haven’t been living under a rock for the past 5 years, you’ve probably heard of chia seeds. These little seeds are packed with fiber, protein, and are a great source of vegan omega-3 which is good for your vegan brain.


What’s really neat about these little seeds is that when you combine them with liquid and let them sit for a few hours or overnight, they turn into a gel like texture or almost like a pudding!


So today’s blog gives you three different chia seed puddings, what we’ll call parfaits, since they are layered with fruit and nice cream (ice cream made from only frozen fruit and maybe a little bit of liquid).


What you’ll want to do first is to take at least 2 tablespoons of chia seeds and combine with ¼ cup plant milk and put that in the fridge overnight.


In the morning you can assemble one of the following chia seed pudding parfaits.


Chocolate Banana Almond

Ingredients:

2tbsp chia seeds

¼ cup plant milk

½ frozen banana

½ banana

1tbsp cacao powder

1tbsp almond butter

1oz chopped almonds (optional)


Blend the frozen banana with a splash of plant milk and a tablespoon of cacao powder to create the first layer, add the nice cream to your dish. Layer some chia seed pudding on top, then some banana coins, drizzle some almond butter and almonds, then repeat until you use up all your ingredients! Enjoy!


Very Berry

Ingredients:

2tbsp chia seeds

¼ cup plant milk

1 cup frozen berry blend

1 package frozen acai

1 cup strawberries, sliced


Add a layer of chia seed pudding to the bottom of the dish and add sliced strawberries on top. Then add in the frozen berry mix after you’ve blended into nice cream, add more chia seed pudding, then more strawberries. The key is to keep layering to your heart’s desire!


Tropical Vibes

Ingredients:

2tbsp chia seeds

¼ cup plant milk (use coconut for a more tropical vibe)

1 cup chopped mango

1 banana

1 cup frozen pineapple (to blend into nice cream)

1tbsp shredded coconut


First add a layer of chopped mango, then add your chia seed pudding, layer with banana coins and sprinkle some shredded coconut throughout those layers. Add your pineapple nice cream and top with more banana coins and shredded coconut. At the very top add the rest of your chia seed pudding and some more shredded coconut. Aloha!
